An Authentic (and Super Easy) Tandoori Chicken Recipe

One of the most popular dishes in Indian cuisine, Tandoori Chicken is adored by many all around the globe. Unfortunately, lots of folks are intimidated by its name, as it sounds like it’s going to be a challenge to make. Well, here’s a super-easy recipe to make an authentic Indian Tandoori Chicken dish, for up to 4 servings.

First, you will need:

-1 kg (or 2 lbs) of skinless chicken pieces. You can use breasts, thighs, drumsticks or a mix of all three.

-The juice of one lemon.

-2 teaspoons of sea salt.

And for the marinade:

1 1/4 cups of plain yogurt (you can use low-fat yogurt if you prefer).

1 tablespoon of fresh garlic, finely minced or crushed.

1 cup of onions, finely chopped.

1 teaspoon of freshly grated ginger.

1 teaspoon of cayenne pepper.

2 teaspoons of Mill Creek Spice Company’s Garam Masala.

1 teaspoon of red and yellow food coloring (if you want a vibrant red color).

For the garnish:

1 lemon cut into wedges.

1 tablespoon of finely chopped cilantro.

Onion rings (raw).


1) Make shallow, diagonal slits on each piece of chicken. Sprinkle the sea salt and lemon juice on each side, rubbing gently. Set aside.

2) In a medium-sized mixing bowl, combine yogurt, garlic, onion, ginger, cayenne pepper and Garam Masala. Mix until the marinade is smooth. Add the red and yellow food coloring (optional).

3) Add the chicken pieces to the prepared marinade, making sure all the pieces are well-coated. Cover and refrigerate for 8 to 24 hours. For the best tasting Tandoori, we recommend refrigerating overnight so that the chicken absorbs all the flavors.

4) For baking: When you are ready to cook, take the chicken out of the refrigerator. Preheat oven to 425°F. Line a roasting pan with foil and place the chicken pieces on it. Drizzle lightly with vegetable oil. Cook on the first side for 25 to 30 minutes then turn onto the other side and cook for another 10 to 15 minutes. Turn off the stove and leave inside to rest for 5 to 10 minutes.

5) For grilling: Preheat grill on medium. Cook on both sides until juices run clear (approximately 10 to 15 minutes on each side).

6) Garnish with cilantro, onion rings and lemon wedges.

This authentic Tandoori chicken dish can be served with Basmati rice, grilled veggies, cucumber salad or roasted corn on the cob.
